- This was my mother's favorite coffee cake and probably dates from the 1940s
- or '50s. It's one of my favorites, too. Just writing about it makes me want
- to go make it. True to its name, this cake goes great with coffee.

- Eunice's Coffee Cake

- 2 1/2 cups flour
- 3/4 cup brown sugar
- 1 cup granulated sugar
- 1/4 tsp. salt
- 1 tsp. nutmeg
- 3/4 cup salad oil
- 1 T cinnamon
- 1 cup pecans or walnuts
- 1 egg beaten
- 1 cup buttermilk*
- 1 tsp. soda

- Mix flour, brown sugar, granulated sugar, salt and nutmeg. Add salad oil.
- Mix well. Removed 1/2 cup (packed) of this mixture. Add to it the cinnamon
- and nuts and save for the topping.

- To the original mixture add 1 beaten egg, buttermilk and soda. Pour in a 9 x
- 12 cake pan. Top with frostign mixture and cut through with a knife so
- frosting can seep into the cake. Bake 35 minutes at 375 degrees.

- *When I don't have buttermilk on hand I use a cup of regular milk and add
- some vinegar (about 2 teaspoons). I let this sit a few minutes to sour.
